Delicious runner bean vegetable soup

This is the most delicious soup I have ever tasted and has a lovely creamy goodness to it. Thank heavens for being overrun with runner beans grown in our garden and then our neighbour dropping off a bag as he was also overrun, that led us to conjure up this gem. An Andrew recipe. Here goes…

2 generous handfuls of runner beans (or 2 x 400g packets and if growing own don’t let them get too big before you pick them) – chop off ends then into one inch pieces
1 large onion
1 large carrot
1 clove of garlic
1 litre of vegetable stock
Generous knob of butter plus 1 table spoon of olive oil or rapeseed oil
Salt and pepper to season

Prepare the beans removing the sides only if stringy. Crush the garlic and chop the other vegetables up into chunks. Melt the butter in a large saucepan and cook all the vegetables with the crushed garlic unti they start to get soft. Add the stock, some salt and pepper to season depending on stock’s seasoning, and leave to simmer for 20-30 minutes. Finally use a hand blender to puree the soup. It should be pale green and creamy.
